Prawn Linguine

Like prawns? Like pasta? Well here is an actual nice and simple recipe for you to try!

Disclaimer: I am no chef or expert in cooking. I am a 27 year old girl, who tries to fit in cooking with working full time and juggling housework (although, sometimes I fall short on the housework, but that’s a story for another time!). 

Trying to look for healthy, simple and easy recipes is tough because whenever I try, it never seems simple or easy and ends up taking too much time. Don’t get me wrong, I enjoy spending time cooking. However, after a long and exhausting day at work, the last thing I want to do is spend more than an hour in the kitchen. 

Like prawns? Like pasta? Well here is an actual nice and simple recipe for you to try. 

Ingredients:

Serves: 4 people

300g Linguine pasta

2.5 tbsp olive oil

1 tsp garlic and ginger paste (alternatives:  can use 1/2tsp ginger powder, 3/4tsp garlic powder)

1 tsp chilli flakes

½ tsp Cayenne powder (optional)

250g Mixed baby tomatoes

400g tin of plum tomatoes 

Salt to taste

Black pepper

Handful of prawns (I use cooked and peeled king prawns)

Handful of parsley

Handful of coriander

Method:

  1. Boil the pasta with salt. 

  2. Whilst the pasta is boiling, in another pot, add olive oil, garlic and ginger paste. 

  3. Once this starts fizzing, add chilli flakes. 

  4. Add ¾ of the mixed baby tomatoes (chopped in half) and season with salt, black pepper and if you like a bit of spice - add the Cayenne powder.

  5.  Blend one tin of plum tomatoes in a food processor. Once the baby tomatoes have softened, add this to the pot. Mix and cover and let this cook (my mum says ‘let this boogh’. If you speak Memon, you will know what this means. Basically it’s when you notice the oil separating from the tomato sauce). 

  6. Add the prawns, finely chopped coriander and parsley (fresh always tastes better, but I’m all for shortcuts so using dried parsley is also an alternative). Although the prawns are cooked, I tend to leave them in for at least ten minutes so that they soak some of the flavour.

  7. Now add in the cooked and drained pasta. Mix and garnish with finely chopped parsley and add the remaining amount of mixed baby tomatoes chopped in half. 

  8. Cover on low heat for five mins and bob's your uncle.
